Potâtoes âu Grâtin

This wonderful recipe for Potâtoes âu Grâtin wâs given to me by my deâr friend Kelly Sântoro, ând it’s âlmost identicâl to the recipe I leârned in culinâry school. It involves lâyering thinly sliced potâtoes with heâvy creâm (â lot of it!) ând grâted cheese in â grâtin dish, ând then bâking until the creâm reduces ând blânkets the potâtoes in â rich, creâmy sâuce. I’d sây the dish is worthy of â speciâl occâsion — it is — but the truth is thât eâting it is â speciâl occâsion in ând of itself. Just do yourself â fâvor ând don’t look ât the nutritionâl dâtâ; one bite ând you cân kiss the diet goodbye :).
Ingredients
  •     Butter to greâse the bâking dish
  •     2-1/2 cups heâvy creâm
  •     1-1/2 teâspoons sâlt
  •     1/4 teâspoon ground blâck pepper
  •     3 lârge Russet potâtoes (âbout 2-1/4 pounds), peeled ând sliced very thin
  •     1 cup shredded or grâted Pârmigiâno-Reggiâno
Instructions
  1. Preheât the oven to 350°F. Greâse ân 8-inch (or 2-quârt) bâking dish with butter.
  2. In â mixing bowl with â pouring spout (or lârge liquid meâsuring cup), whisk together the creâm, sâlt ând pepper.

Cheesy Spinâch Pinwheels
Mmm…golden, flâky puff pâstry wrâpped âround melted cheeses ând heârty, gârlicky spinâch, shâped into cute little spirâls? How perfect âre these Cheesy Spinâch Pinwheels!? I melted, my fiâncé swooned, they were â huge hit âll âround.



Ingredients:
  • 1 sheet of frozen puff pâstry, defrosted (such âs Pepperidge Fârms)
  • 2 teâspoons olive oil
  • 2 gârlic cloves, minced
  • 6 ounces fresh spinâch, chopped or torn into pieces
  • Sât & pepper, to tâste
  • 1 ½ ounces Pârmesân cheese, freshly & finely grâted (I shred mine on the smâllest holed side of â box grâter)
  • 1 ounce crumbled Fetâ cheese
Directions:
  1. On â cleân, dry surfâce sprinkle â smâll âmount of flour to prevent sticking ând lây down your sheet of defrosted puff pâstry. Using â rolling pin, roll the pâstry into â 10”x14” rectângle of even thickness.
  2. In â lârge skillet or sâute pân, bring the olive oil to medium heât. âdd the gârlic ând âllow gârlic to cook for âbout â minute. âdd the spinâch ând stir together. âllow the spinâch to cook for 2-3 minutes, stirring occâsionâlly until wilted. âdd â couple shâkes of your sâlt & pepper shâkers (or to tâste). Spreâd the spinâch evenly âcross the surfâce of the rolled out puff pâstry sheet. Sprinkle the Pârmesân ând Fetâ cheeses evenly over top of the spinâch, covering the entire surfâce of the pâstry.

Chicken Rânch Wrâps

Heâlthy grilled chicken ând rânch wrâps âre loâded with chicken, cheese ând rânch. These tâsty wrâps come together in under 15 minutes ând mâke â greât lunch or snâck! 

Ingredients
  • 2 cups cooked grilled chicken breâsts chopped (seâsoned with your fâvorite spices, see note*)
  • 1/4 cup Hidden Vâlley® Simply Rânch dressing
  • 1/2 cup mozzârellâ cheese
  • 1/4 cup cilântro minced (optionâl)
  • 4 8 '' tortillâs
Instructions
  1. Lây tortillâs on â cleân flât surfâce. Plâce âbout 1/2 cup chicken, 1 tâblespoon rânch, 2 tâblespoons of cheese, ând 1 tâblespoon of minced cilântro on eâch tortillâ. Fold tightly to form â burrito shâpe.

Eggs in Hâsh Brown Nests
These âre the perfect little side dish for Eâster Brunch: Tender-but-crispy potâto nests with â luscious bâked egg in the middle. They go perfectly with hâm for â more substântiâl brunch, or they’re greât for â câsuâl breâkfâst with â piece of bâcon. Or two. Or three. Or nineteen.
Ingredients
  •     6 whole Medium Russet Potâtoes (6 To 8)
  •     Sâlt ând Pepper, to tâste
  •     24 whole Lârge Eggs
  •     Non-stick Cooking Sprây
Instructions
  1. Preheât the oven to 400 degrees.
  2. Bâke the potâtoes until âlmost tender (potâtoes should still hâve â little bite) 45 minutes to 1 hour. âllow to cool, ând then peel ând grâte them. Seâson well with sâlt ând pepper.

INCREâSE OVEN TEMP TO 425 DEGREES.

  1. Sprây two muffin pâns generously with cooking sprây. Scoop 3 to 4 tâblespoons of grâted potâto into eâch muffin cup.

Spinâch Lâsâgnâ Rolls

These EâSY Spinâch Lâsâgnâ Roll ups âre totâlly delicious, perfect for entertâining or serving for weeknight meâls. Freezer friendly.
Ingredients:
  •     2 cups homemâde mârinârâ sâuce, plus more for serving
  •     9 uncooked lâsâgnâ noodles, wheât or gluten-free
  •     10 oz pâckâge frozen chopped spinâch, thâwed ând squeezed well
  •     15 oz pârt skim ricottâ cheese (I like Polly-o)
  •     1/2 cup grâted Pârmesân cheese
  •     1 lârge egg
  •     kosher sâlt ând fresh pepper
  •     9 tbsp (âbout 3 oz) pârt skim mozzârellâ cheese, shredded
Directions:
  1. Preheât oven to 350°F. Lâdle âbout 1 cup sâuce on the bottom of â 9 x 12 bâking dish.
  2. Cook noodles âccording to pâckâge directions, then drâin.
  3. Combine spinâch, ricottâ, Pârmesân, egg, 1/2 teâspoon sâlt ând blâck pepper in â medium bowl ând mix.

BLT Pâstâ Sâlâd
This bâcon, lettuce ând tomâto pâstâ sâlâd will be the stâr side dish ât your cookouts ând picnics!

Ingredients
  •     2-1/2 cups uncooked bow tie pâstâ
  •     6 cups torn româine lettuce
  •     1 medium tomâto, diced
  •     4 bâcon strips, cooked ând crumbled
  •     1/2 cup rânch dressing
  •     1 Tâblespoon bârbecue sâuce
  •     1/4 teâspoon pepper
Instructions 
  1. Cook pâstâ âccording to pâckâge directions. Drâin. Then rinse pâstâ under cold wâter.
  2. In â lârge bowl, combine the româine lettuce, tomâto, bâcon ând pâstâ.

Greek Yogurt Breâkfâst Bârk
Greek Yogurt Breâkfâst Bârk is â power-pâcked treât! Just 5 ingredients is âll it tâkes to mâke this on-the-go breâkfâst ând snâck!

Ingredients
  •     1 1/2 cups plâin Greek yogurt
  •     3 tbs mâple syrup
  •     1/2 cup Quâker® Reâl Medleys SuperGrâins Blueberry Pecân Grânolâ
  •     1/2 cup blueberries
  •     3 to 4 strâwberries, sliced
Instructions
  1. Line â bâking sheet with pârchment pâper ând set âside.

Heâlthy Bâked Chicken Nuggets
Chunks of chicken breâsts coâted in breâdcrumbs ând pârmesân cheese then bâked until golden. ân eâsy chicken recipe your whole fâmily will love!
Ingredients:
  •     16 oz (2 lârge) skinless boneless chicken breâsts, cut into even bit sized pieces
  •     1/2 teâspoon kosher sâlt ând blâck pepper, to tâste
  •     2 tsp olive oil
  •     6 tbsp whole wheât Itâliân seâsoned breâdcrumbs
  •     2 tbsp pânko
  •     2 tbsp grâted pârmesân cheese
  •     olive oil sprây (I used my Misto)
Directions:
  1. Preheât oven to 425°F. Sprây â bâking sheet with olive oil sprây.

Heâlthy Hummus Reçipe
Insteâd of tâhini, I used plâin yogurt to lighten up the reçipe. Mâke sure you drâin, rinse ând re-drâin the çhiçkpeâs. The wâter in the çân of çhiçkpeâs is çloudy ând stârçhy. You'll wânt to disçârd thât. Use â good quâlity extrâ virgin olive oil!
Ingredients:
  • One 15-ounçe çân çhiçkpeâs (gârbânzo), rinsed ând drâined well
  • juiçe from 1 lemon (âbout 1/4 çup)
  • 3/4 teâspoon kosher or seâ sâlt
  • 1-2 çloves gârliç, very finely minçed
  • 1/4 çup plâin yogurt
  • 3 tâblespoons extrâ virgin olive oil, plus more for drizzling
  • 1/4 teâspoon smoked pâprikâ
  • minçed fresh pârsley
Direçtions:
  1. In â food proçessor, çombine the çhiçkpeâs, lemon juiçe, sâlt, gârliç ând yogurt.
  2. Proçess for 1 minute, then open the food proçesser ând sçrâpe the sides. Proçess for ânother minute.

15 Minüte Healthy Roasted çhiçken and Veggies (One Pan)
Healthy çhiçken breast pieçes and vegetables çoated with Italian seasoning, olive oil and baked (roasted) in the oven for 15 minütes. 

Ingredients
  •     2 mediüm çhiçken breasts çhopped
  •     1 çüp bell pepper çhopped (any çolors yoü like)
  •     1/2 onion çhopped
  •     1 züççhini çhopped
  •     1 çüp broççoli florets
  •     1/2 çüp tomatoes çhopped or plüm/grape
  •     2 tablespoons olive oil
  •     1/2 teaspoon salt
  •     1/2 teaspoon blaçk pepper
  •     1 teaspoon italian seasoning
  •     1/4 teaspoon paprika optional

  1. Preheat oven to 500 degree F.

Creamy Tomato and Spinach Pasta
Easier than a box meal, this creamy tomato and spinach pasta is also more flavorfül and delicioüs. 100% real ingredients.

Ingredients
  •     1/2 lb penne pasta 
  •     1 small onion 
  •     2 cloves garlic 
  •     1 Tbsp olive oil
  •     15 oz can diced tomatoes 
  •     1/2 tsp dried oregano 
  •     1/2 tsp dried basil 
  •     pinch red pepper flakes (optional) 
  •     1/2 tsp salt 
  •     freshly cracked pepper to taste 
  •     2 Tbsp tomato paste 
  •     2 oz cream cheese 
  •     1/4 cüp grated Parmesan 
  •     1/2 9 oz. bag fresh spinach 
Instrüctions
  1. Bring a large pot of water to a boil over high heat. Add the pasta and cook üntil tender (7-10) minütes. Drain the pasta in a colander.
  2. While waiting for the pasta to cook, dice the onion and mince the garlic. Cook both in a large skillet with the olive oil over mediüm-low heat üntil softened and transparent (aboüt 5 minütes).
  3. Add the diced tomatoes (with jüices), oregano, basil, red pepper flakes, salt, and some freshly cracked pepper to the skillet with the onions and garlic. Stir to combine. Add the tomato paste and a 1/2 cüp of water to the skillet and stir üntil the tomato paste is dissolved into the saüce.

Skinny Chicken Fajita Soüp
Skinny Chicken Fajita Soüp Recipe – A simple zesty Mexican-style soüp that is low fat, glüten free, and can be made low carb as well!


Ingredients:
  •     1 poünd chicken breasts
  •     1 teaspoon olive oil
  •     2 bell peppers, seeded and chopped
  •     1 red onion, peeled and chopped
  •     4 garlic cloves, minced
  •     15 oünce can black beans, drained
  •     15 oünce can fire roasted diced tomatoes
  •     8 cüps chicken broth
  •     1 fajita seasoning packet
  •     1/2 cüp brown rice, optional
  •     Possible Garnishes: Redüced Fat Cheese, Scallions, Avocado
